my fave camping meal (and one of my biggest hits) is "lake potatoes"

you dice up a bunch of potatoes (skin on), throw a bunch of butter cubed up on it, and sprinkle onion soup mix over the lot. foil 'er up and put it on the fire/grill/coals for about 30 mins or so. they're delicious. you can add other veggies too, like carrots or fresh onions.
